Ingredient Notes

2-Banana Bread Recipe {with Applesauce} (3)
  • Bananas: For maximum sweetness, use 2 large overripe bananas. The more brown spots, the better!
  • Applesauce: To cut back on sugar and eliminate the butter, we used unsweetened applesauce for moist banana bread.
  • Honey: A little bit of honey is used to enhance the sweetness. Maple syrup can also be used.
  • Eggs: Helps bind the ingredients together and adds some extra protein.
  • Vanilla Extract: Enhances the banana flavour.
  • Whole Wheat Flour: For lighter bread, use whole wheat pastry flour. Regular all-purpose flour can also be used, however, whole wheat flour provides that extra boost of fibre and nutrients.
  • Baking Soda and Baking Powder: To help the bread rise as it bakes.
  • Salt: To help balance the flavours.
  • Dark Chocolate Chips: Mini or regular dark chocolate chips are optional but add a tasty chocolate flavour and extra texture to the loaf.

  1. Start by lowering the oven rack to the lower third of the oven to prevent the 2 banana bread from browning too quickly. Next, preheat the oven to 350 degrees F and grease a 9×5 inch loaf pan with nonstick cooking spray.
  2. Using a fork, potato masher or electric mixer, mash 2 bananas in a large bowl. Next, whisk in 3/4 cup of the applesauce until combined. Then whisk 1/4 cup honey, 2 eggs and 2 teaspoons of vanilla extract into the banana mixture.
  3. Next, using a spatula fold in the dry ingredients until just combined: 1 and 3/4 cups whole wheat flour, 1 teaspoon baking soda, ½ teaspoons baking powder, 1 teaspoon cinnamon, and ½ teaspoon salt.
  4. Pour batter into the prepared pan and smooth the top with a spatula. Bake for 55-60 minutes in the lower third of the preheated oven. After about 30 minutes tent the loaf pan with aluminum foil to prevent it from browning too much. The loaf is done when a toothpick inserted into the center of the loaf comes out with only a few moist crumbs. Remove the loaf from the oven and let it cool for 5-10 minutes on the counter before removing it to a wire rack to cool fully. Let it cool before slicing and serving.

Tips for the Best Banana Bread Recipe

  • I used 2 very large overripe bananas (about 8-9 inches long) that together weighed 305 grams without the peel. I recommend using large bananas that are overripe to ensure that there’s enough natural sweetness since minimal sugar is added to this recipe. Place the bananas in a brown paper bag with an apple to help them ripen faster!
  • This one bowl banana bread is lightly sweetened to keep it lower in sugar. If you prefer a sweeter loaf, add in 2-4 tablespoons of coconut sugar or brown sugar in addition to the honey.
  • For easy removal of the loaf from the pan, spray really well with cooking spray or line the bottom of the pan with parchment paper and spray bottom and sides with cooking spray. You may also need to use a knife to loosen the edges from the pan before removing the loaf.
  • For the perfect banana bread, don’t over mix the batter, as it will result in a more dense, less fluffy loaf. Instead, mix the dry ingredients with the wet ingredients until just barely combined, and no more dry flour is visible

Banana bread lasts 4-5 days at room temperature. To extend the shelf life of banana bread, wrap it tightly and store it in the refrigerator for 7-10 days.

FAQs

How much applesauce to replace banana? ›

Applesauce (store-bought or homemade) can substitute for a banana in baked goods. Replace one banana with 1/2 cup of applesauce, but don't use more than 1 cup of applesauce because the mixture will be too wet.

Can I bake 2 loaves of banana bread at the same time? ›

You can double a standard banana bread recipe, as long as you bake the batter in two same-size loaf pans, or one after the other.

What happens if I put too much banana in my banana bread? ›

Banana bread recipes typically ask you to use overripe bananas so that they're easier to mush. This means it's tempting to toss all your bananas into the mix when you're ready to bake, to avoid food waste. But if you add too much of the fruit into your batter, your bread could turn out mushy, heavy, and wet.

What happens if you put too many eggs in banana bread? ›

Adding more eggs makes for a spongy, less flavorful banana bread. Doubling the number of eggs I was using resulted in a spongy cake with a moist texture.

How many cups is 2 bananas? ›

2 bananas: 1-1/3 cups chopped | 1 cup mashed. 3 bananas: 2 cups chopped | 1-1/2 cups mashed. 4 bananas: 2-2/3 cups chopped | 2 cups mashed.

How much applesauce equals one banana in baking? ›

Use applesauce in a one-to-one ratio as a substitute for mashed bananas in baked goods. However, if the recipe calls for whole bananas, use ½ cup applesauce for every 1 banana.

Why isn t the middle of my banana bread baking? ›

Your oven may not have been set to the correct temperature. You may not have used the correct pan size. You may not have followed the recipe correctly. For example, you may have added too much liquid, or you may not have added enough of some dry ingredient, and therefore your dough may have had too much moisture.

Can I use a 9x13 instead of two loaf pans? ›

The solution? A 9×13 baking dish. The batter that fills two loaf pans is perfect for one baking dish. We didn't even need to adjust the cooking time that much; since the baking dish is more shallow, it bakes in about the same time as a loaf pan, even though it's bigger.

Why is my banana bread too thick? ›

Thankfully, the banana bread batter is forgiving, and it's not too hard to fine-tune it. If your batter's a bit too thick, add a tablespoon or two of milk to thin it out. A too-thin batter can be remedied by sprinkling in a tablespoon of whole wheat flour (a great way to add some extra fiber!) and gently mixing it in.

At what point should you not use bananas for banana bread? ›

While it's okay if the banana peel is dark brown or even black, if the inside is too, then the fruit is beyond ripe and now on its way to rotten. Another sign that bananas have gone bad is if they start leaking any fluids. When in doubt, just toss the bananas out.

Is baking soda or baking powder better for banana bread? ›

As a general rule, you can use either baking soda OR baking powder in banana bread – both ingredients will make your banana bread rise. While baking soda will react with acidic ingredients in the batter to raise your bread, baking powder can leaven banana bread without the addition of acidic ingredients.

Why did my banana bread come out rubbery? ›

Over mixing the batter

The reason is as you mix, the gluten begins to develop, and when too much development happens, you can end up with a dense, chewy loaf rather than the soft and delicious banana bread you were hoping for.

Which is better, baking soda or baking powder? ›

The leavening power of baking soda is about three to four times stronger than baking powder. This means that you need a lot less baking soda in your recipes. If a recipe calls for baking soda and you only have baking powder, you need to use the right baking soda to baking powder conversion.

How many bananas equals 2 eggs? ›

Use ripe bananas to add moisture. One mashed banana can replace one egg in cakes and pancakes. Since it will add a bit of flavor, make sure that it's compatible with the other ingredients of the recipe.

How many eggs does 1 banana substitute? ›

How much banana should I use to replace one egg? Generally, half a mashed banana (about 1/4 cup) can replace one egg. However, it's important to consider the moisture content of the recipe as bananas also add moisture.

What is a substitute for 1 cup of mashed bananas? ›

You can use applesauce. Replace one banana with 1/2 cup of applesauce. Don't use more than 1 cup of applesauce, though, because the mixture will be too wet. Canned pumpkin works, also.

What is substitution for 1 banana? ›

Unsweetened applesauce can be a good source of vitamin C and be a good substitute for bananas in a recipe that calls for bananas. In baking, 1/2 cup of applesauce can be used for one banana. This can be particularly helpful for those who need a low-potassium diet.

What does applesauce replace in baking? ›

If you're looking to make some of your favorite baked goods a wee bit healthier or vegan, applesauce is your magical friend! Applesauce can be used as a substitute for oil, butter, or eggs, and still give you delicious baked treats.
