Red Lobster Salmon New Orleans Recipe

Ingredients

  • Red Lobster Cajun Seasoning (See Box Below for a Link to our Recipe) or other Cajun Seasoning, store bought or homemade, of choice
  • Red Lobster Rich Lemon Butter Sauce (See Box Below for this Recipe)
  • 2 cups Alaskan Shrimp peeled, deveined and tails removed
  • 2 tablespoons Clarified Butter
  • Four 4-ounce each Atlantic Salmon fillets skin removed
  • 2 Lemons cut into 1/2

Instructions

  • Prepare Red Lobster Cajun Seasoning according to the recipe linked to in the Box below. Set aside.

  • Prepare Red Lobster Rich Lemon Butter Sauce according to the recipe in Box below. Set aside and keep warm.

  • Submerge shrimp in boiling water.

  • Turn off heat and let sit until just cooked. Do not over cook. Remove from heat and drain. Set aside.

  • Place a sauté pan over medium heat.

  • Add clarified butter to melt.

  • Place salmon fillets on a plate or work surface.

  • Generously season one side each fillet with the Cajun seasoning.

  • Gently place fillets (1, 2, 3 or all four, whatever will fit) in pan, seasoning side down.

  • Cook until seasoning side is brown. Turn over.

  • Squeeze a lemon half over each fillet in pan. Cover pan. Steam for approximately 2 minutes (The steam will cook the fish).

  • Remove fish from pan to serving plates. Cook remaining fillets in the same way, if necessary, being sure to keep cooked fish warm.

  • Spoon prepared shrimp over top of each fillet.

  • Pour Red Lobster Rich Lemon Butter Sauce over top of shrimp.

  • Serve hot.

Ingredients

  • 1 small can Chicken Stock
  • 1/2 tablespoon dried Onion Flakes
  • 1 teaspoon unsalted Butter at room temperature
  • 1 teaspoon all All-Purpose Flour
  • Dash White Pepper
  • Dash Salt
  • Freshly squeezed Juice of 1 Lemon to taste
  • 1/2 cup Heavy Cream
  • 4 tablespoons cold Butter

Instructions

  • To a medium pot, add chicken stock and onion flakes.

  • Place over medium high heat, uncovered, and bring to a boil.

  • In a small bowl, combine 1 teaspoon unsalted butter and flour. Mix until it becomes a paste.

  • Whisk butter/flour mixture into stock. Strain out the scum that forms on top.

  • Boil, still uncovered, until mixture is reduced to 1/3. Stock should be thick enough to coat the back of a spoon.

  • Add white pepper, salt, and lemon (Do not add too much of lemon juice all at once. Squeeze in 1/2 a teaspoon first and taste test. What you are after is a subtle tartness.) Mix well.

  • Add heavy cream. Mix well.

  • Remove from heat. Whisk in 4 tablespoons cold butter.

  • Set aside and keep warm.
