Chicken breasts are rolled with ham and cheese before being breaded and fried in a skillet for one delicious dinner that is full of texture and flavor.

Despite it’s fancy French name, chicken cordon bleu is surprisingly simple and easy to make and is ready to serve within about 40 minutes.

Can you make it ahead of time?

This stuffed chicken is best served as soon as it’s ready so that the breading is nice and crispy. If you like, you can roll and dredge the breasts up to 24 hours ahead of time and keep them covered in the fridge until ready to cook.

If you do have leftovers, they will keep well for up to 4 days in the fridge. Reheat them in the oven at 350F for around 15 minutes til warmed through.

Can you oven bake instead of fry?

I love the crispiness that is achieved by frying, but you can oven bake these if you prefer. Place the breasts onto a prepared baking sheet and bake in a preheated oven at 400F. It will take between 20 and 25 minutes for them to cook through.

Chicken Cordon Bleu Recipe

Ingredients

  • 3 boneless skinless chicken breasts
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • 6 slices swiss cheese
  • 6 slices ham
  • Canola oil for frying
  • 1 cup crispy fried onions
  • 1 cup bread crumbs
  • 2 tsp chopped parsley
  • ½ tsp montreal steak seasoning
  • 1 cup all-purpose flour
  • 3 eggs beaten

Instructions

  • Season the chicken with salt, pepper, and garlic powder.

  • Place chicken breast between two sheets of plastic wrap and pound until about ½ inch thick.

  • Remove the plastic wrap. Put a slice of Swiss cheese, then a slice of ham, then another slice of swiss and another slice of ham over the chicken. Tightly roll the chicken and put it onto a new sheet of plastic wrap.

  • Wrap the chicken in the plastic wrap tightly and twist the sides to tightly squeeze the chicken and form it. Repeat with each chicken and place into the fridge for 30 minutes.

  • Preheat 2” of oil in a tall sided pan to 350*

  • Add crispy fried onions to a food processor and pulse for 20 seconds. In a medium mixing bowl, mix together fried onions, bread crumbs, parsley, and montreal seasoning. In a separate bowl add flour. In a third bowl, add the egg and whisk. Dredge the chicken first in the flour, then the egg, and then bread crumbs.

  • Carefully the breaded chicken cordon bleu in the oil and cook for about 7 minutes per side to reach a golden brown color. Check to be sure the internal temp is 165*. Serve immediately and enjoy!
